What is this? Does it have a name?

Asked by kritiper (25757points) August 24th, 2022

My grandmother and mother made this solution with vinegar, water, and salt, and maybe pepper. They would slice up cucumbers and onions into it, let it sit a while, then serve it along with everything else at dinner. Is it a southern thing?

YES…it’s very much a Southern thing & it’s very delicious!!! I’ve always heard it called a “cucumber salad”. My family usually added some cubed tomatoes to it as well.

My mom made that, too. Must be a southern thing.

Most definitely a Southern thing!!! Especially in a small Southern town where most people grow their own gardens. Good way to use up fresh picked cucumbers when they all ripen overnight…it extends their use by days!!!

Learned to make it in Southern California, would put a few crushed red pepper flakes in to and let it sit in frig for an hour or two. That was over 60 years ago.

Sounds like pickles

Cucumber salad, funny its a southern thing because I made it at the nursing home all the time up here in Wisconsin lol, although I believe we added some mayo as well. Salt, pepper, vinegar, mayo, and onions and cucumbers.

@HP these are served the same day, pickles are usually 24 hours to a week of soaking, before canning.

My Grandmother and mom made it too. Both Norwegian Minnesotans. Not a southern thing. More of a “what are we going to do with all these cucumbers thing”!

And a spoon of sugar to calm the vinegar. We always had it as a dinner side dish. No mayo or tomatos in ours.

@HP Bite your tongue, sir! A lot more goes into pickles. I make them every year.

No mayo in mine either. I didn’t put tomatoes in mine, but my Mom wouldn’t make it without the tomatoes (she loved them)!!! Also, Mom thought sugar was made by the devil so no sugar in ours.

There’s a HUGE difference between pickles & cucumber salad!!!

@LadyMarissa “sugar was made by the devil” lol she wasn’t far off ;)
We never did get the name of this though. btw I have never heard of this.

^^ According to Betty Crocker, it’s called Cucumber Salad. Some other sites call it a Vinegar Cucumber Salad. There’s also a Creamy Cucumber Salad that uses Sour Cream in place of the vinegar.

I always assumed that it was a Southern thing because once I moved above NC (MD & VA), nobody knew what it was nor did they serve it, so it doesn’t surprise me that you’ve never heard of it (living in VA).

Thanks to all.
A friend of mine described his as made with mayo as “vinaigrette sauce” or more correctly to some, “A sauce made of vinegar, oil, shallots, parsley, etc., used especially on cold meats, as calf’s head.” -from Webster’s Collegiate dictionary, 1960 ed.
Also called “vinaigrette dressing” and can be used on fish.
But I was just asking, specifically, as I mentioned earlier, with fewer ingredients, so I assume it is not “vinaigrette” specifically, as was made by our family. And no salad oil, mayo, or sour cream!
I found a recipe for vinaigrette dressing in my Betty Crocker cookbook, and it asks for all kinds of stuff but only ¼ cup vinegar and ¾ cup salad oil. Other ingredients include sugar, paprika, mustard, lemon juice in place of vinegar, a few drops of onion juice or clove garlic, green olives, dill pickles, chives, pimento, and hard cooked eggs.

Cucumber salad. Also, a few cherry tomatoes.

Have seen many variations of this from different cultures. My mom does it with sugar. My MIL does it with a dash of sesame oil.
