What is your favorite easy recipe for calamari marinara?

Asked by DandyDear711 (1512points) January 29th, 2009

I bought a pound of cleaned squid at the fish market today and want to make it into marinara sauce. Do you have a recipe? How much do you pay for squid? I paid $5.69/pound.

This is the one I use most often:
Calamari Marinara

Ingredients:

1/4 cup Olive oil
3 cl garlic, mince
1 cup Onions, chop fine (not sweet onions)
1/4 cup Parsley, chop
2 tbl Fresh basil, chop
2 lb Squid, clean, slice
1/4 cup White wine
1/4 cup Clam juice (optional)
3 cup Marinara sauce
1 pch Oregano
Salt and pepper
Crushed red pepper flakes

Heat oil and sauté garlic and onions until slightly brown (do not allow garlic to burn). Add basil, parsley, wine, clam juice, marinara sauce, oregano, salt and peppers; stir over medium heat for 2–4 minutes then add squid. Cook until squid is tender. Serve over linguine w/grated Parmesan!

@byTheBay – I found that exact recipe this evening at recipeland or some such place and made a half recipe (I only bought 1 lb of squid)! I didn’t have white wine so I used more clam juice. It was soooooooo good! I am bursting, in fact! Many thanks!
