I need a recipe that I can use with Pita Bread and Chicken Breast.?

You can roast or grill the chicken breasts, cut it up into pieces, mix with lettuce, parmesan cheese, and some caesar dressing… then put it into toasted or grilled pitas rubbed with a little bit of garlic.

-Cut a chicken breast into finger sized strips.
-Whip together an egg and a tablespoon of mustard and a little green herb you like in a bowl. (sage, italian seasoning mix, parsley, basil, tarragon… any of these will work for the herb)
-dip the chicken pieces in the egg mixture
-lightly salt and pepper the eggy pieces
-roll in a little bread crumb
-heat oil in a pan at medium to medium-high heat
-cook the strips about 3 minutes per side until the bread crumb gets brownish

Then put the strips in the pita bread with whatever else you like in a sandwich.

To expand on what @aprilsimnel said: spread the flattened pita with oizza sauce (jadded) or tomato paste, or pesto sauce

fresh basil is great if you have it,

sliced onions, black olives, mushrooms

sliced or shredded chicken.

Sprinkle with parmesan or grated mozzarella.

Cook bacon and drain.
Slice an avocado (peeled).
Sprinkle the slices with lemonjuice.

Stuff the pita with cooked chicken, avocado slices and bacon strips.

My favorite pita & chicken recipe is for curry & sriracha sauce marinated then grilled chicken breasts cut into strips, sliced avocado, thin sliced tomatoes, wheat sprouts and some wild rice squirted with fresh lemon juice.

I have an incredibly delicious one. It’s kind of complicated, but I absolutely love it!!
Here goes:

Tandoori Spiced Chicken Breast with Grilled Tomato Jam and Herbed Yogurt Sauce
Recipe courtesy Bobby Flay

Ingredients
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons ground ginger
2 tablespoons ground coriander
1 tablespoon ground cumin
1 tablespoon ground cayenne
1 tablespoon ground turmeric
1 tablespoon ground white pepper
1 tablespoon kosher salt
4 (8-ounce) boneless skinless chicken breasts
3 tablespoons vegetable oil
A cup or two of spinach
4 pita breads, warmed on the grill
Tomato Jam, recipe follows
Herbed Yogurt, recipe follows

Heat grill to medium-high. Combine all spices and the oil in a medium bowl to make a paste. Rub a thin layer of the spice paste onto each side of each chicken breast. Grill for 6 to 7 minutes on each side or until slightly charred and cooked through. Remove from the grill, let rest 5 minutes, and cut lengthwise into ½-inch thick slices. Serve open-faced on pitas: spread the Tomato Jam on each pita, then a few spinach leaves, top with chicken, and a drizzle of Herbed Yogurt.

Grilled Tomato Jam:
5 plum tomatoes
2 tablespoons vegetable oil, plus more for grilling
Salt and freshly ground pepper
half a medium onion, chopped
2 tablespoons balsamic vinegar

Heat grill to high. Brush tomatoes with oil and season with salt and pepper. Grill tomatoes on all sides until charred. Remove from the grill and coarsely chop.

USE BROILER OF OVEN FOR ABOVE STEPS.

Heat oil in a medium saucepan. Add the onion and cook until soft. Add the tomatoes, balsamic vinegar, and saffron and cook until thickened. Season with salt and pepper. Transfer to a bowl and let cool to room temperature before serving.

Herbed Yogurt:
1 cup plain yogurt
¼ cup chopped fresh mint leaves
¼ cup chopped fresh cilantro leaves
Salt and freshly ground pepper

Place all ingredients in a food processor and process until smooth.

Season with salt and pepper, to taste. Refrigerate if not using immediately.

@poofandmook: lol, maybe. I still have a tongue ;-). It also bears noting that the first nine ingredients are pretty much the same as what you would get if you bought “curry powder” in the spice aisle and put it in, instead.

I have two ideas here:

BBQ Style:
Bake the chicken breast with some good BBQ sauce or Worcestershire sauce. Then cut it up into pieces. Put some additional BBQ sauce on the pita bread. Then fill with the chicken and some favorite veggies. Yum.

Mediterranean Style:
It also sounds good to bake the breast with some olive oil and spice. Then cut up into little pieces. Put some feta cheese in and some pesto as a spread. Fill with fav. veggies and enjoy.

@poofandmook : Ha! I lived in the southwest for decades and I’m over 40 so my taste buds like that sort of thing. :^>

@La_chica_gomela : Ok, if you combine all those things and say “curry powder” it doesn’t sound quite as much of a hit of spice. Still, it sounds nice. I’ll let you know if I try it sometime soon.

@cyndyh: You should! It’s delicious!!! I always like to combine my own spices instead of using those pre-mixed “pumpkin spice” or “curry powder” type of things, anyways.

@La_chica_gomela : We usually do, too. Indian food is not one of my specialties, though. My husband makes the best chili powder. I’m making chili using it today. Yum. :^>
