Is einkorn flour gluten ok?

Asked by skadu (199points) December 30th, 2009

I’ve been studying about an ancient wheat called einkorn. I wonder if anyone has done research on this and whether some people with gluten intolerance can eat it.

According to my research- no. Einkorn is not listed under ‘good’ or ‘acceptable’ on the any of the websites I’ve found.

All I know is that Einkorn flour contains high protein.

I’ve seen results from some studies about einkorn showing that it may be safe for some people who are intolerant to gluten but since the studies were about other topics, they did not go in detail.

I found that you can buy whole grain einkorn wheat berries online at Einkorn.com. They don’t sell flour but they do sell the berries. Very cool!
