What is your best fresh salmon recipe?

I do have the nerve. I am asking you to dig in secret stash of awesome tried and true recipes and tell all.

I am having a cookout with a group of friends and the other main course will be halibut in a French sauce the lady only tried once and says was divine.

I feel the pressure to kick it up a notch but don’t have a lot of time to dig up and try various dishes.

Now I am hoping Kardamom will offer some prime suggestions. But I still want to hear from the rest of ya’ ll especially seeing as she is vegan.

I am about an intermediate cook. So if it is super complicated or involves double broilers we might be in trouble.

I love cold poached salmon on a mixed green salad. Yummy!

It is my opinion that fish is best when touched the least.

I like salmon steamed or baked with plenty of the freshest butter you can find and a bit of fresh lemon juice. And that’s it.

Very simple just take a little butter rub on the bottom of the pan put the salmon in then top with sliced onions crumble some butter on top of the onions, then top the onions and butter with sliced tomatoes, salt and peper to taste, put into a 350 degree oven until the salmon is cooked and flakes, then if its not carmelized enough put it on broil to carmelize the tomatoes and onions.

Please note a friend who likes really spicy food also will put some sliced hot peppers on top of the onions but I prefer it without so if you like hot food that is always an option too.

Sear on both sides in a hot, heavy sauté pan with a little EVOO. Poach for a few minutes (until cooked) in chicken broth.

Serve with lemon wedges and snipped fresh dill.

If this is fresh salmon then no recipe is needed. Eat it raw. mmmmm I could really go for some raw salmon right about now actually.

My favorite way to cook salmon though is to make some sort of herb rub and pack it onto the salmon and then cook it in a really hot pan. The salmon will get a nice crispy herby exterior while remaining soft and juicy on the inside.

I shall try this challenge, but I must let you know that I have never eaten salmon, so you’ll just have to check out these recipes. I listen to a cooking show (Melinda Lee on KFI on Saturdays in Los Angeles) and the host is always talking about cooking salmon, so I’m going with her advise. If you go on her page, go to the search box and type in salmon.

This is one she often talks about, cooking salmon on a Cedar Plank on the BBQ grill.

This one sounds fabulous, Cedar Planked Salmon with Asian Glaze

Here is one that has a Spanish flare, Pan Seared Salmon with Kalamata Olives and Salsa Cruda

This one sounds really good to me, but is quite different than the above recipes. Papardelle with Salmon in a Pesto Cream Sauce

For a very fresh sounding dish, how about Salmon with Spring Vegetables and Herbs

For a more casual dish, maybe you’d like Salmon Tacos with Mango Avocado Salsa

This is more of an appetizer, but it sounds great. Salmon and Corn Cakes They don’t tell you how to cook the salmon, so you can use this Basic Recipe

This is a more traditional recipe, Oven Baked Salmon with Lemon and Dill

For something fun, how about Grilled Salmon Skewers with Melon Salsa

I like salmon plain and simple. A little herb rub, don’t overdo it. Bake in a hot oven with a little butter. Serve with lemon or lime. If you want bake the salmon in foil with the butter and sliced lemon or lime. Don’t overcook it.

If it’s REALLY fresh, then thinly sliced and consumed with some wasabi mustard in sushi soy sauce; some sliced, pickled ginger; grated daikon radishes; and rice on the side. But the fish must be so fresh there is absolutely no odor of fish, as that classical fishy smell is actually produced by bacteria.

@Kardamom Thank you yes though never having salmon seems sacrilegious in my pov. I love the last one I think I shall try it. Normally salmon as described by the overwhelming majority is divine I have done it many times before. This is possibly the thing I was looking for.

I grow fresh dill in pots on my deck. Sometimes I just tuck a few sprigs behind my ears and dribble some lemon juice on my wrist pulse points. Who needs the salmon?

I just toss the fillet in a baking dish, surround it with fresh asparagus spears, drizzle a little melted butter and S&P over it all and bake it at about 350 for 30 minutes. The asparagus comes out tender but slightly blackened and crispy on the edges, it is soooo delicious!
