How can I cook eggs?

I am cooking more since I’m staying at home. I bought 2 dozen eggs, but my repertoire of ways to cook them is limited to the usual things you think of for breakfast. I can scramble them, fry them over easy, and make omelets. What are some other ideas I can try?

I like to boil them & from there you can make deviled eggs for a side dish, or egg salad for sandwiches or chop them up to add to salads

You can try making a quiche. Egg cups are also a good option. Just use a muffin tin to add in scrambled egg and add-ins like sausage, cheese, spinach or whatever you like, and bake.

Frittata or strata layered with cheese and vegetables. Add ham and bacon if you care to.

My mother-in-law introduced me to steamed eggs. Good stuff.

Shirred (not a typo) eggs with bunches of different stuff. Shakshouka if you have the other ingredients, baked Italian eggs, the Internet has a bunch of fine recipes to try. Have fun with this, I love baking eggs!

Lots of gluten free breads and cakes rely heavily on eggs to maintain texture and stability, so I’d vote for breads and cakes!

Growing up, my favourite breakfast was two hardboiled eggs in a mug, chopped up in the mug with butter and pepper with using a knife while still hot.

Muffin Tin with veggies and meat. Bake them after oiling the inside of the tin. Mini Frittata with shredded potatoes or cooked rice and cheeses. Breakfast burritos with wraps/tortillas around egg, cheese, chopped veggies, peppers and salsa.

Merengue cookies? Egg white, sugar, cream of tartar, and I add chocolate chips and walnuts. I can get you the measurements if you are interested.

Flan also uses a lot of eggs.

I love brownies. I usually use the box, it calls for 2 eggs I think.

If you have Bisquick they have some nice recipes for casseroles. I like their “cheeseburger pie’:https://www.bettycrocker.com/recipes/impossibly-easy-cheeseburger-pie/8c78aa78-c368–40fa-8a88–1654640c7525 but they have breakfast casseroles and al sorts of recipes that use eggs.

Also, foods like meatloaf and cheese stuffed shells, usually call for an egg. I typically leave the egg out, but you can certainly put it in.

Deviled eggs are treat in my opinion that are usually kept for special occasions, but hey why not now?

Eggs usually last a long time so you probably have some time to eat them.

We have a lot of eggs, and I find that quiche is a great way to use them. I really like:

- spinach, sauteed onions, and feta
– broccoli and cheddar

You can grill them in the shell, then remove the shell and cold smoke them.

Poach them and make eggs benedict.

This is one of those things that seems really hard until you actually just do it at which point you realise it’s incredibly easy. With the added bonus that it always impresses other people.

Take a god sized pan of water and bring to the boil then turn the heat down a bit. You want a gentle simmer. Break egg into a cup and use the cup to gently tip egg into the water. Wait 3 minutes and fish it out with a slotted spoon and put in a bowl while your do more eggs. And that’s it. It’s that easy. After a couple of eggs you may need to skim off some of the egg white that separated and makes it look messy but that’s really more for aesthetics than anything else. Don’t bother salting the water just salt the eggs when they’re poached. Vinegar doesn’t seem to make any difference and the whirlpool technique so popular in the 70’s and 80’s just makes a mess. The key is to add the egg to the water as gently as possible.
And not overcook it.

Serve on toasted English muffins with a slice of ham and some warm hollnadaise sauce (shop bought is fine but it’s also pretty easy to knock up too if you’re board and have a lot of free time :) ) and some black pepper. Take photo for Instagram and enjoy.

Or swap the ham for smoked salmon or spinach.

Lately I have seen on TV fried eggs on top of a hamburger ,on top of a pizza( get pizza dough ,use cookie cutter to make a round area for each egg then drop the egg into each hole, garnish your pizza and cook as usual. ( saw this on cooking show years ago).

Try “Matzoh Brie!” I made some this morning! 2 Matzoh and 2 eggs with salt and pepper.
And coffee! Yum! It was a blast from my past.

My favorite is 3 soft boiled eggs, under 3 minutes on high. Place in egg cups standing then cut the tops off and dip with buttered sliced in strips to fit in the eggs type of bread. Eat the rest with a small spoon.

I made a frittata. I used 6 eggs and added onion, mushrooms, spinach, and cheese. It’s really good, and there’s enough for a few days.

Soft boiled eggs are heavenly! The most common way I associate with is putting them in a soup, like ramen. Sooooooo good!
