Easter is coming and I need some input on finding a new recipe for the main course of the meal I have planned?

It is a family tradition to cook up a couple of rabbits for Easter dinner (since we have no children and therefore no real need for chocolate bunnies, colored eggs or any of that stuff) and while my one tried-and-true recipe for oven roasted rabbit is great, I was wondering if anyone has a different recipe I could try. I’d like to have a new way to make rabbit tender and juicy. I like simple food, nothing too extravagant, but does anyone out there have a great recipe for bunny?

I don’t have a rabbit recipe. I do have a lamb recipe though. Lamb is more appropriate than rabbit for Easter anyway, since Christ is the Lamb of God and bunnies are a pagan addendum.

@Judi not THE Easter bunny, two lesser farm-raised bunnies.

@Qingu, that was a nice display, but not specifically what I was looking for. I like to keep my food in a dish, not nailed to a board for artistic purposes.

Well, you can skip the crucifixion step. The lamb is still quite good. Just make sure you don’t overcook it.

That’s worse than eating the Easter bunny. And people think communion is morbid!

I get many of my recipes from Epicurious.com. I evaluate them by looking at the fork rating, then the “would make it again” percentage, and finally reading all (yes, all) of the reviews. If there are many, many reviews, I’m more likely to forgive a somewhat lesser fork rating.

Having said that, I want you to know I’ve never made this recipe but it looks good and is something I would certainly try out. This one is the one I like best—Panko and Mustard Crusted Rabbit. But the braised rabbit has higher quality reviews, I believe.

I don’t have a recipe for you but this question reminds me of something that happened on Easter Sunday several years ago. We just woke up to have our sons look for the hidden easter eggs. We opened the door to go outside and there was our cat with a rabbit in it’s mouth, trying to bring it inside. Luckily our sons were old enough to not let this incident upset them!

@evelyns_pet_zebra I’ve never eaten rabbit and am not morally opposed to it. I wasn’t trying to make you feel like you shouldn’t eat rabbit for Easter dinner. People are always telling my daughter that her bunny would be great in a stew, and she gets so mad. This question made me think of that. I hope you have a lovely Easter dinner!

I found this recipe. I’ve never tried it but it does look tasty.

go with leg of lamb with mint or ham soaked in coca-cola. yes, coke.
