Do you have a signature dish?

Asked by Haleth (18947points) November 25th, 2009

Something that you can maybe cook from scratch with no recipe, or something people ask you to make every time a family gathering rolls around? What dish are you most known for?

For me it’s apple crisp. It’s one of the only things I know how to make, and it’s reeeeally easy other than all the tedious peeling and cutting. I like eating the apples when they are still raw but the sugar and spices is mixed in. Sometimes I eat the crumbly topping raw, too. :( One of my friends and her family knows me for making old fashioned mac and cheese, with the homemade sauce and breadcrumbs on top. Her grandparents, aunts, uncles and little cousins came over for Thanksgiving, and one of the little cousins ate a ton of it. She got really quiet, then – poot! -, and she yelled, “YOUR MAC AND CHEESE MADE ME FART!” Um… from the mouth of babes, I guess?

Pasta Pesto!
Garlic, ground up basil, olive oil, noodles… it’s heaven in a bowl.

Coconut Cake. I know the recipe by memory.

Banana Nut Bread, Monkey Brains and Vegetarian Meatloaf.

I like to make home made pasta of all sorts, but probably russian ravioli, Pelmeny.

Frito Pie.

(Well, this is a jokey recipe…sort of an inside joke recipe.)

When I was married (in another life) and we were both struggling students at university, we had to cut a lot of corners. Plus, it didn’t help that I was a mostly incompentent cook. One of my enterprising aunts gave me this “you can’t ruin it if you ruin it” recipe for “Frito Pie”....which basically was piling layers of Fritos, cheese and veggie chili in a casserole dish and heating it till the cheese melted.

(And no, this did not contribute to the demise of my marriage…he had a strong stomach.)

Now, my daughter laughs at me….and always asks, “Oh…mom’s cooking….must be her FRITO Pie.”

I won’t even start to talk about the roommate I had in college who always put Dr. Pepper in her dishes. (True story.)

Spaghetti Bolognese.

rangerr's avatar

@DarlingRhadamanthus I make that with my stepsister. We call it “throw-up casserole” It’s soooooo good.

Haleth's avatar

That sounds a lot like layered nachos… I make something like that too, and it’s really yummy!

ragingloli's avatar

making the sauce takes hours though

My green beans with bacon and onion is simmering in the crockpot; my pecan pies are in the fridge. I also make a mean lasagna. (The first needs no recipe, for the other two I do have to look at the recipe but I always change it a bit.)

oratio's avatar

@ragingloli True. Great food often takes time. I guess that’s what they call cooking with love.

rangerr's avatar

You guys make me want pasta. Now.

Haleth's avatar

@ragingloli do you make the sauce from scratch, like with fresh tomatoes?

ragingloli's avatar

@rangerr
i tried one of the premade sauces you can buy in the supermarket…simply gross

rangerr's avatar

@ragingloli I don’t mind the premade stuff, but I grew up on a farm, so we grew pretty much everything we ate. I guess I just stuck with that.

My mom and I sort of “share” signature dishes—that is, we both make similar things in similar ways that get requested by the same people. For us, these dishes include: pumpkin custard (pumpkin pie without the crust), carrot cake, and zucchini muffins. I also make some mean ginger snaps. Everyone loves ‘em!

My salsa is awesome, too. Ask anyone. :P

YARNLADY's avatar

When my family is asked what foods grandma cooks (that’s me), they always say sausage and cabbage with German potato salad.

avvooooooo's avatar

Several. Onion dip is the favorite which I think is funny because its so very simple. I also do a mean white sangria.

MrBr00ks's avatar

There is this no mix cake recipe called Dump cake I can do, involving cake mix, cherry pie filling, and pineapple. I also make a damn good home made chili.

nebule's avatar

mine is Lasagne although I’ve never made it for my family and don’t have guests round very much…but that’s what I would cook. I’ve made it for a couple of boyfriends and they have said that it’s the best they’ve tasted

I’m so not diggin’ being on the diet this morning!!

oh…what is cherry pie exactly…is it an American thing?...I don’t think we have it over here… just a pie with cherries instead of apples I presume?

MrBr00ks's avatar

@lynneblundell basically, unless it is referring to This.

gemiwing's avatar

My brownies are my entree to many a swinging soiree. (And my poetry too!)

yess – For any gathering I make this super simple cream cheese, hormel chili and cheddar cheese dip… I always make massive amounts and it’s always gone within minutes.

As for cooking, I make this bean salad with different types of beans, and red pepper, corn, cilantro, onion, with a cumin vinaigrette… it’s delicious. Or a mango salsa with tomatoes and onion, it’s perfect with grilled chicken.

Syger's avatar

No one’s really asked me to make it but I make some pretty creative (Not really) and delicious things with pepperoni.

:[ It’s a lot better than it sounds.

Sauteed corn & squash
Acorn squash/fluted dark green squash with orange flesh- peel it and dice it
Corn nibblets- preferably from a fresh cob so they are firm and not so starchy
Diced yellow or white onion
Minced cilantro
Freshly ground black pepper
Butter mixed in before serving instead of salt

Both spagetti and guacamole.
For my mom, it was tuna sandwiches and fried chicken.
My sister Pat makes the worlds best brownies (sorry @Zen_Again )

And since you changed your name again, @Zen_Again Welcome to Fluther. Lurve.

janbb's avatar

@filmfann and @Zen_Again Seems to me we have to have a Fluther brownie bake-off!

Who wants to judge?

nebule's avatar

why does @Zen_Again keep changing names??

nayeight's avatar

It would have to be my reeses peanut butter cheesecake that I just made up after I learned how to make cheesecake (my favorite dessert). Another one would be my stuffed peppers, my mom absolutely loves them. My mom makes the best homemade stuffing I’ve ever tasted. I finally watched how she makes it this morning & can’t wait to try it one day on my own. I pretty much love everything my mom cooks though. Ohh! Shrimp & grits! She makes a MEAN shrimp & grits!

Zen_Again's avatar

I am actually just ok with the brownies – an amateur with little time for it – but my lasagna – now that’s to die for and you’d be farklempt if you had a nosh.

In the days when I was able to cook, food was my first language. 2 signature dishes come to mind:

Whole wheat bread not made in a bread maker, I’m talking about real bread

Masala Fish fresh fish stirfried with red capsicum and spring onion, strongly seasoned with Garam Masala

janbb's avatar

@Adagio When can I come over?

evegrimm's avatar

Oh, and I just remembered: my mom makes killer spaghetti and meatballs, while I have the marinara sauce covered. Her recipe is based on my grandma’s and is dead simple but possibly my favoritest food ever, even over brownies and ice cream and homemade applesauce.

My marinara sauce is favored by lots of people (mostly grown-ups with less picky taste buds) and is based on an older one from Cook’s Illustrated, but I miss the flavors that are present in my mom’s.

I have a few:
Paella
stuffed shells
buttermilk poundcake
coca-cola cake

nebule's avatar

@JLeslie coca-cola cake??? wow!!!

JLeslie's avatar

@lynneblundell It’s an old recipe from the 70’s, tons of people have it. It’s a sweet chocolate cake much like a texas sheet cake. Do you want the recipe?

JLeslie's avatar

Read recipe completely before starting to bake.

Coca-Cola Cake

Cake

2 cups flour
2 cups sugar
2 sticks butter or margarine
1 cup coca cola
3 tablespoons Hershey’s unsweetened cocoa powder
½ cup buttermilk
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla

Preheat oven at 350.
Combine sugar and flour in a mixing bowl and set aside.
Heat butter, coke and cocoa until it boils.
Pour heated mixture over sugar and flour, mix well with a spoon.
Add beaten eggs, baking soda, vanilla, and buttermilk.
Cook in a 13 X 9 greased and floured pan for 30 – 40 minutes at 350 degrees Fahrenheit.
Immediately after removing the cake from the oven begin making the icing.

Icing

1 cup chopped pecans
½ cup butter or margarine
3 tablespoons Hershey’s unsweetened cocoa powder
6 to 8 tablespoons of Coke
1 box 10X powdered sugar

Place entire box of powdered sugar in a large bowl and set aside.
Heat butter, cocoa, and coke until it boils.
Pour heated mixture over powdered sugar and quickly mix well.
Add pecans and mix so they are well coated.
Pour icing over hot cake.

Let cool before cutting…. easiest to cut if you chill the cake, but be sure to let it come to room temperature before placing in the refrigerator.

And here is the buttermilk poundcake because it is so good (the outside gets a little brown and it is sweet almost crunchy, but not). Great for brunch.

Buttermilk Pound Cake

Preheat oven 325 degrees. Grease and flour 1 large bundt pan.

2 sticks butter (margarine works also)
3 cups sugar
3 cups flour
¼ teaspoon baking soda
½ teaspoon salt (I don’t add this, because I use salted margarine)
1 cup buttermilk
2 teaspoons vanilla
4 eggs

Cream butter and sugar together. Add eggs one at a time. Add flour alternatively with buttermilk. Add baking soda and vanilla. Beat all together until well blended. (I use an electric hand mixer, although you can beat by hand, but my hand would hurt, it is a very heavy batter).

Bake about 1 to 1¼ hours. Let cool in pan 10 minutes.

JLeslie's avatar

For the coca cola cake you have to use Coke, you can’t use a different cola, it will affect the taste.

nebule's avatar

Thank you so much @JLeslie I’d never heard of it before xxxxx Big Hugs xxx
