What are your favorite Spring and Summer meals?

We’re finding things to get my daughter’s attention and somehow, earlier, we landed on food. I got some smiles when we recalled some great meals we’ve shared.

I started to wonder, what foods do you welcome Spring and Summer in with, if anything special.

I got her smiling when I reminded her about the first time we made packet meals on the fire. Roasted corn on the grill was another good memory. S’mores made the whole family smile.

Salad with strawberries and walnuts! It’s a delicious and refreshing salad.

Fresh Express Spring mix salad, apple slices, walnuts, and Newman’s lite rasberry walnut vinagrette.

Cod, sole or flounder, some light white fish prepared almondine, or with just lemon, something simple.

a side dish I like is cous cous with pine nuts, zuchini, and mushrooms

Strawberries and a tub of low-fat Cool Whip. Yum!

My favorite single warm-hot weather meal is the Italian salad at the Follow Your Heart cafe:

Marinated Artichoke Hearts, Garbanzo Beans, Red Onion, Black Olives, Tomatoes, Mozzarella Cheese and Pepperoncinis. Served on a Bed of Organically Grown Salad Greens.

I get it with soy Mozzarella cheese, which seems fresher and less fat in flavor than the dairy version.

lobster rolls and key lime pie with an Arnold Palmer.

Home made “Green” potato salad lumped on top of a pile of spring mix.
Green onions
Green olives
Celery
Chopped boiled egg
Cubed Jack cheese
Freshly shelled stir fry type baby peas

Baked chicken thighs & legs until tender
BBQ grill finish with BBQ sauce cut with Sriracha
Sliced Garden grown tomatoes
Sliced Green “Bubbies” brand pickled tomatoes
Pepperocinis

Taco Salad (involves garden fresh tomatoes, shredded cheese and Doritos)

Caprese Salad

And on the grill…
Mesquite grilled artichokes (coated in olive oil w/ seasoning), whole roasted garlic cloves and our area’s finest bratwurst.. yummmmmm

Grilled veggies, yum! Grilled asparagus, portabello mushrooms, peppers, onions, and zuchini. Can’t believe I didn’t think of it, good someone else did.

My very favorite is chicken wings on the grill with homemade barbeque sauce.

Pesto pasta salad with cheese tortellini, grape tomatoes, fresh mozzarella cheese (ovolini), broccoli florets and pesto (home made or store bought).

Greek salad with romaine lettuce, red onion slices, pepperoncini slices, kalamata olives and feta cheese with a red wine vinaigrette.

Classic American style potato salad with sliced hard boiled eggs and black olives. Home made is usually better than store bought.

Caprese salad with thick slices of fresh mozzarella, fresh basil and heirloom tomates with a drizzle of olive oil and balsamic vinegar.

Pasta primavera with broccoli and cauliflower florets, sliced red bell pepper, sliced crookneck squash or baby pattypan squash and thick chunks of carrots with fettucine noodles and a cream sauce garnished with fresh basil.

Lemonade and Iced Tea.
