So I know its better to cook your own meals but sometimes its too time consuming. I just want to know of any 30 minute or under recipes that are healthy, filling, and low fat. This would be great for a week nigh tor weekend. Thank you!

Bake a chicken breast, throw some spinach in a pan, put it on a plate, then put the chicken on top of it.

Sear a salmon fillet, serve with a bit of homemade tarter sauce (use mostly sour cream and just a hint of mayo instead of the all-mayo recipes).

Omelets; add in whatever you’ve got around in the way of veggies, meat, and cheese. I like this recipe for ramp pesto omelette with asparagus and goat cheese.

You can also do many recipes that have you set for a few days, like casseroles, lasagnas, and quiches. They take more time, but just that first night.

Chop up a head of lettuce. Add chopped tomatoes, carrots, a little onion. Toss with a little bit of low fat salad dressing. Eat all you want.

Microwave a Yukon Gold potato. Fill with some decent salsa.

Buy prewashed baby salad greens. Augment with a chopped hard-boiled egg, a little canned salmon or tuna and whatever vegetables you have lying around. Dress with an EVOO, apple cider vinegar, Dijon mustard and fresh dill. Or skip the animal protein and sprinkle with crumbled walnuts.

Break two eggs in a small bowl. Whip up, sprinkle a little water in, add some lo-fat cottage and microwave (2 minutes, stir after first minute). Garnish with fresh snippets of dill.

Get yourself one of those rotisserie chickens and then you can make the following:

Asian Chicken Salad with Rice Noodles

Chicken Taco Salad (Note: if you want you can bake a flour or whole wheat tortilla on a cookie sheet in the oven, until it gets crispy, to use as your base, instead of tortilla chips, although Trader Joe’s has a bunch of very good, preservative free tortilla chips)

Or Pulled BBQ Chicken Sandwiches which you can serve with a side of Napa Cabbage Slaw with Lemon Pistachio Vinaigrette

Or Chicken Salad with Cranberries, Apples and Walnuts (serve on whole wheat bread, or some crusty artisan bread from Trader Joe’s or similar store, or just spoon it into lettuce cups.

Or White Bean Chicken Chili

Or Pasta with Chicken

Or Chicken Burritos with Black Beans

When you go to the store, get yourself one of those bags of pre washed salad greens, and then get some grape tomatoes, carrots and celery and beets and turnips and bring them home and wash them and slice them and put them in individual ziplock bags. That way, in the next few days you can just grab everything and throw together a quick salad. You might also want to have some slivered almonds or walnuts, or sweet spicy pecans that you can get from Trader Joe’s and maybe a block of feta cheese so you can mix and match any of these ingredients. Either get a bottle of your favorite dressing, or simply drizzle on a bit of Balsamic vinegar and extra virgin olive oil with a twist of fresh ground pepper.

Grill some boneless chicken breast with pineapples on a grill pan. Season with a little bit of salt and garlic.
Have a handful of rice (use minute rice) using a small bit of oil.
Have a fruit and veg. salad with fat free ranch dressing. Or thousand island fat free dressing.
Or whatever dressing you like that is fat free. Or at least light and somewhat sweet.
