Real eggnog with the booze and the raw eggs or some sort of fake eggnog?

dynamicduo's avatar

I know I’m interested in a recipe for the real stuff!

rossi_bear's avatar

not with the booze. that would kill my insides, but the homemade eggnog.the kind with raw eggs. not fake eggnog.

There is real eggnog without booze? Interesting…

rossi_bear's avatar

yes there is. just can’t find my recipe for it. :(

@soapchef.. i can’t have it with alcohol. my stomache will not handle it. but i will try and see if i can do it without the alcohol. thank you!

rossi, This is delish without the booze! No problem, just leave it out. If anyone else wants some they can add it to their own cup.

I’ve made Alton Brown’s recipe and it’s fantastic.

Ingredients
4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon (Maker’s Mark)
1 teaspoon freshly grated nutmeg
4 egg whites*

Directions
In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.

Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill and serve.

This is the one that we gave out as Family Food Educators at OSU. I’ll put it on my blog too. I just substituted soy milk, and non dairy creamer. Oh and forget the rum flavoring we adults just spiked our cups with the real thing.

Title: Eggnog
Categories: beverages, holiday
Yield: 9 servings

3 Eggs; slightly beaten
1/2 c Sugar
1/4 ts Salt
3 c Milk
1 c Half-and-half
1/2 ts Vanilla
1 1/2 ts Imitation rum flavoring
Nutmeg; as desired

Mix beaten eggs with sugar and salt in the top of a double boiler. Add
milk and half-and-half. Cook over boiling water, stirring constantly,
just until mixture coats spoon, about 10 to 15 minutes. Cool. Add vanilla
and rum flavoring. Chill.

Immediately before serving, strain eggnog. Beat with a rotary beater
until frothy. Pour into chilled cups. Sprinkle each serving with nutmeg,
as desired.

NOTE: For this recipe, use only clean eggs, with no cracks in shells.

[Additional note from Karen: Don’t serve this to ANYONE with a compromised
or underdeveloped immune system! This would include children, the
elderly, the infirm, and anyone else who can’t afford to risk salmonella
poisoning. If in doubt, consult your own physician.]

cooksalot's avatar

Check with the doctor maybe they’ll let you have eggnog. It may all depend on if they want you to have clear liquids or just liquefied.

rossi_bear's avatar

@cooksalot… they said clear liquids. :(
