The best way to melt chocolate is using a bain-marie ie a bowl over a pan of boiling water. The bowl shouldn’t touch the water.

Use a double boiler if you have one. You can do it in the microwave, but just pulse it. If you run it for a long time the chocolate will burn, and that’s gross. Put about a cup of chocolate chips in. Run it for 30 seconds, remove, stir with a spatula, repeat. Over and over again.

Just a note: you can use a Wok to melt chocolate effectively.

You should try an inexpensive chocolate melter if you plan on doing this often. It melts the chocolate slowly and keeps it at a good consistancy.

I have one and I’ve been addicted to dipping anything and everything.
