What's the trick to cracking an egg with one hand?

I see it done on cooking shows and they make it look so easy! Can anyone else do this and have any tips?

I’d say confidence and practice :-)
I used to have to crack a couple of hundred dozen eggs a day when I worked in a hospital kitchen. You get pretty damned good at it. My kids still sometimes ask me to do the “one egg in each hand” trick at breakfast.
Get a DVD of Sabrina and watch Audrey Hepburn learn that trick at Le Cordon Bleu in Paris.
Or watch Julia Childs in Julia and Julie master the art of dicing an onion with a chet’s knife. Remember her motto was “Everything in excess.”
I agree with @ModernEpicurian, it requires confidence.
Just go for it, it’s just an egg. if you get shell in the bowl just pick it out.
Be aggressive, it works better if you crack the shell deep into the egg.
Cracking an egg one handed is actually easier than it looks.
You’ll do it correctly at least once with your first omelette.

I use my thumb in a flicking motion. Pop it in and pop the top off. Pretty simple.
Doesn’t the yolk get all over your fingers though?
@andrew Who, me? Nope. I just get my thumb in there enough to get some leverage and push the top off. I hold it at a 45 degree-ish angle and don’t end up hitting the yolk, where ever it is in there.
