What are some of your favorite 600 calorie or less meals? (lunch/dinner)

I’m trying to eat healthier (which is SO hard for me!) and I would love to hear some of your favorite low calorie recipes that have yummy flavor and hopefully filling. crosses fingers Thanks!

A granola bar and a liter of Gatorade. It works for me when I’m in a hurry or don’t want to interrupt a task.

Non Vegetarian Dishes

Ultimate Burger
(Makes 4 servings)
1 egg
1 lb lean ground beef
1 c oats
1 c diced onion
1 c chopped spinach
2 Tbsp reduced-fat shredded Mexican-blend cheese
4 whole-grain buns
Salt and pepper to taste
1. In a large bowl, whisk the egg. Add everything else and mix—your hands are the best tool—until well blended.
2. Form the meat into four patties.
3. Place the burgers on a grill pan or nonstick skillet that’s heated over medium high.
4. Cook for 6 minutes per side or to the desired level of doneness.
(Wrap any extra burgers in plastic and freeze them for later.)

Beef and Bleu Cheese Salad

(Makes 2 servings)
9 oz flank steak
Salt and pepper
2 plum tomatoes, cut into eights
⅓ cup sliced onion
1 small clove garlic, crushed
5 cups, chopped romaine lettuce
4 Tbsp low-fat balsamic vinaigrette
3 Tbsp crumbled blue cheese
1. Preheat a grill pan on medium high. Season both sides of the steak with salt and pepper, and cook it about 6 minutes on each side.
2. Remove the steak, let it rest for 3 to 5 minutes, and then slice it diagonally across the grain into thin strips.
3. In a large bowl, mix the tomatoes, onion and garlic. Add the meat and lettuce, pour on the vinaigrette, and toss well to completely coat everything
4. Top with the cheese.

Burritos
(Makes 4 servings)
1 pound ground beef
1 red bell pepper, sliced
1 package taco seasoning
Whole grain tortillas
2 cups shredded Monterey Jack or Cheddar cheese
2 cups shredded romaine lettuce
2 cups diced tomatoes
Salsa
1 tsp. olive oil

1. Cook the beef in a large sauté pan over medium-high heat until browned. Add the red pepper and continue to cook, stirring, until softened slightly. Add the taco seasoning and water, stir, and simmer for 10 minutes, until the pepper slices are al dente.
2. Place a tortilla on a flat surface. Spoon 2 scoops of the beef mixture on the bottom one-third of the tortilla. Layer on cheese, lettuce, tomatoes, and salsa, being careful not to overload the tortilla. Fold the left and the right sides of the tortilla inward 1 inch, and then, starting from the bottom, roll up the tortilla until the seam is down. Repeat to make additional burritos.
3. Using a napkin of a paper towel, rub the olive oil on the bottom of a sauté pan. Heat on medium-high until hot but not smoking. Place the burritos, in batches if necessary, in the pan and cook for 3 to 4 minutes. Flip and cook on the other side for 3 to 4 minutes longer, until heated through and browned.

Spinach salad with artichoke hearts, grilled chicken, slivered almonds and red onions topped with parmesan cheese and a little spray-on Salad Spritzer dressing. Quick, easy and delicious.

Huge salad of greens, radishes, carrots, cukes, zucchini, raw cauliflower, sunflower seeds, walnuts, red onions, and home-made vinaigrette. Current favorite is Evoo, apple cider vinegar, lime juice, stone-ground Dijon mustard, cumin and chopped coriander.

If you like tuna or hard-boiled eggs, you can add 3 oz of either of them. You can also add some black or navy beans, oat bran, ground flax seed. You won’t be hungry for at least twenty minutes.

All my meals are under 500 calories. One I like in particular is Thai soup with veggies and mushrooms w/tofu chunks.

@Simone_De_Beauvoir: But how many meals do you eat daily? If only three, give us some more menus.

@gailcalled I eat 3 meals daily. I’ll give you my breakfast meal that is 400 calories:
1. 1½ cups of soy milk (for calcium + protein)
2. 1 serving of frozen acai (for anti-oxidants and 1 fruit serving)
3. 1 serving of blueberries/blackberries and 1 apple (for 2 fruit servings)
4. 1 serving of vegan protein powder.

…all blended in the blender for one giant smoothie! you should try it, it’s very filling and if you get a bit hungry between breakfast and lunch (which I sometimes do) eat an orange (which I carry around).

@Simone_De_Beauvoir: Thanks. I don’t drink soy milk due to breast cancer, and I like something to crunch on in the AM.

Oatmeal, fruit, nuts, oat bran, ground flax seed, sunflower seeds, slivered almonds and tea with skim.

My sister gave me a container of chocolate-flavoured whey powder. It looks daunting but will try some at some point.

@gailcalled Oh! Well use whatever milk you like then. When I want crunch, I eat a bowl of milk and cereal plus a fruit – the cereal I make sure has at least 9g of protein/serving like this one.

@gailcalled Well, then you eat well! lol…I can give you my lunch meal if you want – it’s 300 calories:
1. A LOT of mixed greens
2. Half a can of kidney beans
3. 1 serving Thai flavored tofu
3. Lemon juice and flax seed oil as dressing

@Simone De Beauvoir: Too bad I can’t eat tofu either. But I am a huge fan of beans and salad.

And one can eat a large roasted beet with a spoon.
