What is a good recipe for hummus?

I really love hummus, so I really need a good recipe. Help?

Drain a can of garbanzo beans. Mash them up. (a food processor is good, but you can do it with a fork.) Add gradually, olive oil, sesame oil, lemon juice, mashed garlic, salt. People like different proportions of these ingredients (I like it more lemony). Some people like it lumpy; others, creamy. You’ll have to experiment to get it exactly the way you like it. (Alternatively, you can google and get hundreds of recipes for it. You may be lucky and get a perfect one on the first try. . . .or not. Good luck.

The above recipe is great but I love to roast my garlic instead I find that the raw garlic gives the hummus a really spicy flavor, probably because I love alot of garlic flavor and want to put alot in. So I roast the garlic first by cutting the top off, drizzling it with olive oil and roasting it in the oven wrapped in tin foil. When it is nice and soft and slightly brown all you have to do is squeeze the whole thing so to get the garlic out of the shell of the garlic.

Rather than sesame oil, use tahini (sesame butter)- it really gives a rich, nutty flavor to the hummus. I also sprinkle it with paprika.

The problem with tahini is storing it. It separates and it is very difficult to work the solids and the oil into a usable condition. The sesame oil has a stronger flavor, but that’s easy to fix. @crisw I agree with the sprinkle of paprika. A swish of chopped cilantro is also good for a garnish.

A few cloves of garlic
2 cups chickpeas
Quarter cup olive oil
Cup of tahina
Lemon juice
Salt
Blend in a food processor
Add water if too thick
Garnish with parsley and pine nuts

This recipe is straight from the top. My girl friend is an Arab

I’m not wild about the tahini taste so I use more lemon juice and usually a hit of balsamic vinegar as well. I know that is not traditional but I like the kick it gives.

I am going to try the sesame oil next time, that sounds like a good idea to me. I am going to try roasting the garlic next time too.

I also sometimes add some red capsicum and chili as well. It is good on baked potatoes instead of butter.
