Would you care to provide me with some delicious risotto recipes?

I love risotto, but I’m a bit low on the recipe end of things. I know the basic formula, so I’m looking more for the extras, the “accessories” of the dish, if you will.

@koanhead It’s this rice dish that’s really creamy, made from special rice with white wine and chicken broth. It actually doesn’t taste much like rice, which is nice (I’m not a big fan of rice on its own).

Saute some diced onion with the rice when you brown it in the beginning. Also, some asparagus broken into bite-sized pieces. Just at the end toss in some sliced mushrooms and one or two cloves of minced garlic.

Toward the end of the risotto cooking (dipppers full of hot chicken broth), add two cups of diced chicken or raw shrimp.

Whn the risotto is just finished cooking, add ½ cup of grated parmesan reggiano cheese.

Spinach, portobello mushrooms, garlic and parmesean cheeze is my fav!

I think wild/exotic mushrooms are the best addition. Rehydrate them first, if they are dried. My personal favories are boletes (aka porcini or cepes) and morels… not at the same time! Oyster mushrooms are also great.
