What is the difference between different types of olive oil?

I will add that many olive oil manufacturers have been caught mischaracterizing the quality of their products.
Be careful when you are paying top dollar.

Here’s my take.
Olive oll – great for cooking and a,healthier option over canola, looks lighter. .
Extra virgin olive oil, EVOO – Great for dipping bread , Darker color.

When I consume EVOO I get an unpleasant “biting” feeling at the back of my throat. So, I commit blasphemy and mix a little regular olive oil into the dipping dish to cut it.

There’s a really famous deli in Ann Arbor, MI called Zingerman’s. There’s a grocery section where they have specialty goods including a huge variety of olive oils (I think there are more in person). When I was visiting, they were doing olive oil tastings with some that were crazy-expensive. I ended up buying a couple of bottles of very expensive olive oil that had a pleasant, mild “grassy” character and another with a peppery quality that also worked well. I gave them as gifts to people who are hard to buy for since they have “everything they need.”

Costco has Kirkland Signature Organic Extra Virgin Olive Oil. It is top rated in taste and is one of very few that haven’t had other oils added to dilute the olive oil
