What are you eating today?

I made mexican flautas with homemade guacamole, tomato sauce with cilantro, and mexican rice!!

Thanksgiving Leftovers

My husband made bacon and eggs for breakfast. Since then, we’ve been eating slices of warm bread straight from the bread machine. Yum.

I’ll probably work in some vegetables for dinner somehow. Gotta get some actual nutrition sometime today.

Thanksgiving leftovers. And I’m gonna have a Fuji Chicken Salad in about an hour.

Grilled chicken, onions, feta, apple slices, walnuts, spinach and romaine. Mmm

I’m eating my diet shakes today. Trying to recover from Turkey day, the Basque food last night. I never eat like that any more. ugh….

I am making my killer enchiladas with all that leftover turkey, and to make it interesting, I added half of a Jolokia pepper, and several dried Habaneros, as well as the usual Jalapenos and dried chiles.

I gave my leftovers away to a guy who begged me for them on the train on Thursday. I’d be lying if I said I didn’t miss getting the red velvet cake.

Getting a late start today. Had some coffee an hour ago, and just now melted some Swiss cheese in a croissant. In a while I’ll have some fruit. I love completely disorganized days.

We’ll have a rerun of Thanksgiving dinner tonight.

@Judi – what’s Basque food like?

It’s Spanish/French, sort of with a little Italian too. I usually order the “Set-up,” which is plenty for me. It’s Beans and vegetable soup with salsa, Bread, salad, pickled tongue (yuck) French fries and vegetables. Some places include spaghetti with the set-up. Entrees could be Steak or chicken, (my nephew had frogs legs) Lamb duck, or pasta. Escargot was also available as an appetizer. For some reason Bakersfield is famous for it’s Basque restaurants. We have several. I think some are better than the one we went to last night though, but we WERE a party of 14. I guess I should give the girl a break. I should also say it’s served “family style” so whole dishes come out and you take what you want.

Neat! Sounds oddly delicious. I’ve been fascinated with Basque stuff ever since I heard about their language being so novel. Thanks for the info!
