Can you recommend some good spinach recipes?

I like spinach, but I can’t finish the fresh stuff off before it starts getting icky. So what are some good cooked recipes where spinach plays a significant role?

Right now all I’ve got are quiche florentine and spanakopita.

Lasagna or Manicotti is where I use it most. I mix it up in the cheese.

Wilted_spinach salad. You don’t have to use the bacon if you prefer vegetarian.

I think it goes well when paired with this Spinach soup.

lol Moments ago I spread some melting spinach leaves on my garden. Compost is the consolation prize for not eating stuff fast enough.

I like sauteed spinach because you really can’t go wrong. Raw spinach is good. And so is well-cooked spinach. Cook it a little, cook it a lot, whatever.

- Heat oil or butter in a saute or frying pan
– Add garlic if you want
– Throw in spinach
– Cover it
– Toss and stir
– Serve when it looks yummy (opinions differ, some like it leafy, some like it cooked down)

Breaded Spinach- Soak, thoroughly pick over and wash two quarts spinach. Melt three tablespoons butter in skillet, letting it brown slightly. Have ready three medium thick slices of bread, crust removed, cut into small cubes. Brown these in the butter. When spinach has been boiled as usual, drain thoroughly, cut up and mix in skillet with the bread, adding a little more butter if needed. Cook two or three minutes, add ¼ cup cream, salt, pepper and enough vinegar to make it a little tart. Serve in mound on platter with hard boiled eggs for garnish.

I make a spinach side dish that is very good.

First, you wilt the fresh spinach (after washing it very well) using the water that clings to the leaves.

Then you dice some onion and saute the onion until done. Add in the wilted spinach and saute. Salt and pepper to taste.

Stir in sour cream and serve.

Olive oil, lots of garlic, salt and pepper and a quick saute with the spinach. Just cook to heat through. Sprinkle with Parmesan if you wish. Delish.

Brown 4 potatoes sliced thin across the short way and brown in olive oil…Season with Sea Salt, add 2 cloves of chopped garlic and sliced Portobello mushrooms until tender. Add spinach, season with lemon pepper and cook on medium heat till cooked to how you like it and serve! Total yum!

I saute it in olive oil with other vegies like broccolli or zucchini and just eat it up for lunch or dinner. Sprinkle with fresh lemon juice. Delicious.
