Red beans & rice. If I triple beans do I triple trinity?

I’m tripling a recipe that calls for 1 onion, 1 bell pepper & 5 celery stalks for 1 lb of red beans. Do I triple the trinity? Seems like a lot!

That’s a lot of celery. Down here in LA we make red beans and rice every Sunday during Saints games. For that amount of beans.. I would put :

2 large onions
2 large bell peppers
5 stalks of celery
3 or 4 pods of garlic
3 or 4 links of sausage we like andouille

If Gooch does the cooking, he cooks the beans in one bottle of beer and a cup or two of water

Dont forget to soak them the night before and add salt and red pepper to the recipe
