VPN question when sending email - which IP address shows up in the email headers?

I live in the USA. Let’s say that I am using my VPN and am logged into Italy as my endpoint so I can get access to Italian TV.

While I am logged in and have my Italy IP address, I send an email to someone.

Email headers will show the transmitting IP address and all the jumps between the local machine and the recipient.

My question is this: Is the first (source) address on the email my local IP address here in the US? Or is it the VPN based IP address with an Italian IP?

It would show the sending email server’s IP, which isn’t likely to be either of the ones mentioned.

Let’s say you use gmail just as an example. The headers will show Google’s IP address.
